Say “Milwaukee,” and your mind might conjure up some thoughts of beer, brats, and bowling. But there is a well-kept secret that native Milwaukeeans have known for decades: this city is a powerhouse for Milwaukee-style pizza.

When we launched our Milwaukee’s Pizza Bus tour, we did so because our guests were constantly asking for the “best Milwaukee-style pizza” recommendations. After visiting everything from old-school pizzerias to modern upscale establishments, we’ve mastered the art of the Milwaukee thin crust.

What Is Milwaukee-Style Pizza?

While most people are familiar with Chicago deep dish or New York’s foldable slices, Milwaukee-style thin crust pizza is in a league of its own. Our signature pizzas evolved from Sicilian and Italian immigrants who arrived in the late 1800s.

In 1945, as World War II was ending, Sicilian immigrants John Caravella and Joe Todaro began serving pizza at the Caradaro Club. Their marketing strategy? Handing out free pizza slices on downtown streets. The city was hooked.

To be considered the best Milwaukee thin crust, a pizza must hit four specific marks:

  1. The Cracker-Thin Crust: It must be unfoldable and crisp—ideally about 1.25mm thick.
  2. The Sauce: A basic, savory tomato sauce that covers the dough without overpowering it.
  3. The Cheese: High-quality shredded mozzarella (usually applied under the toppings).
  4. The Tavern Cut: Unlike the “pie cut” (triangles), Milwaukee pizza is always cut into small, snackable squares.

Where to Find the Best Milwaukee Style Pizza

The Original: Caradaro Club

While it has moved from its original location, the Caradaro Club still uses the same recipe from 1945. It remains the gold standard for Milwaukee thin crust pizza. We love the “near-burnt” flavor found in the dark spots of the crust, which provides a smoky, crisp finish that you can’t find anywhere else.

The Brady Street Legend: Zaffiro’s Pizzeria

Located in Milwaukee’s “Little Italy” on Brady Street, Zaffiro’s has been a staple since 1954. Their crust is famously thin—about the width of two credit cards. To achieve this, they par-bake the dough, flip it, dress it, and return it to the oven. This creates a crunch that has consistently led food writers to name it the best Milwaukee-style pizza in the city.

The Old School Authority: Ned’s Pizza

Since the 1950s, Ned’s Pizza on the south side has been a masterclass in the tavern-cut style. It is the quintessential neighborhood spot known for its consistent, crispy Milwaukee thin crust. It’s a perfect example of why locals stay fiercely loyal to their neighborhood pizzerias.

The Heritage Guard: Balistreri’s and Calderone Club

Many of Milwaukee’s top pizza chefs actually got their start at the Caradaro Club before opening their own shops. Establishments like Balistreri’s, Calderone Club, Lisa’s, and DiMarini’s all carry on the tradition of the square-cut, “nearly naked” tomato sauce, and the signature cracker-thin base.

Beyond Thin Crust

While we are a city defined by the thin crust, Milwaukee’s pizza scene is growing. While we have a few Chicago-style deep dish spots and New York-style “by the slice” joints, the trend is moving toward authentic wood-fired ovens and traditional Sicilian Sfincione.
